On September 5, the Regent Taipei Hotel invited the three-hatted Chef Nobu Lee to showcase his culinary skills.

Born in Taiwan and bred in Japan, Lee was destined to work with food at an early age. In his first job as a kitchen hand at the age of 16, he did menial work like washing dishes, and from there began his dream of a career in fine dining.
出生台灣、在日本長大,李信男很早就與料理為伍。他的第一份工作是廚房助手,16歲的他,當時主要做洗碗盤這種粗活,也從此展開他的高級餐飲夢。

His academic performance, however, did not match his interest in food. He was once expelled from school, and he failed his college entrance exam. Later, he found an opportunity to work for Joel Robuchon, the Michelin-starred Chef of the Century.
雖然如此,他對食物的興趣卻與他的學業成就不甚相符,他曾被退學,也曾把大學入學考考砸。隨後,他發現一個能為米其林星級主廚侯布雄工作的機會。

He worked his way up to the position of sous-chef and played a key role at L’Atelier de Joel Robuchon in Taipei. He also worked as the deputy chef at Spago, which was opened by the renowned American chef Wolfgang Puck. Later in his career, he was promoted to head chef at Marque, a restaurant owned by Mark Best.
他一路拼到副廚,躋身台北侯布雄法式餐廳的關鍵角色。同時,他也是Spago的副廚,該餐廳由一位知名的美國主廚Wolfgang Puck開設,後來更在Mark Best的餐廳Marque被提拔為主廚。

In 2018, Lee went to New Zealand to be the head chef of Clooney Restaurant. It was at Clooney that his crowning achievement arrived; he won the Three Hats of the Good Food Guide Awards.
2018年,李信男回到紐西蘭擔任Clooney餐廳主廚,並在Clooney迎來他生涯最高成就,他贏得Good Food Guide Award的三頂高帽殊榮。

In addition to his training in European cuisine, Lee has also been influenced by his Japanese heritage. Since he has received training in the art of sushi preparation, he slices his fish very carefully and lines up the cuts in a precise manner.
除了歐洲菜式的訓練,李信男也深受其日本背景影響。他曾學過如何製作壽司,因此他能將魚切得十分仔細,並精準擺盤。
