Among the many desserts served by roadside vendors and at night markets across Taiwan, the three most iconic are Aiyu jelly, grass jelly, and shaved ice, which have been popular on the island for over a century.
台灣各地路邊攤和夜市販賣的眾多甜品當中,最具代表性的就屬愛玉凍、仙草凍和刨冰,在台灣已流行超過一個世紀。

Another famous Taiwanese jelly is grass jelly, which is not made from grass at all; it comes from the Chinese mesona plant, which is related to basil and mint.

Also known for their medicinal properties, the dried leaves and stems of the mesona plant are boiled in water with various starches as well as sugar and baking soda to make grass jelly.
