Nonetheless, not all salted fish is carcinogenic; only the fish cured with nitrite is considered carcinogenic.

Nitrites turn into nitrosamines when heated or mixed with humans’ gastric fluid, resulting in the high risk of developing certain cancers like nasal cavity cancer, esophageal cancer and stomach cancer.
